The Westin Resort Nusa Dua, Bali Welcomes Chef Valerio to Establish Prego
Nusa Dua, Bali, April 2013… The Westin Resort Nusa Dua, Bali takes great delight to welcome Italian Chef de Cuisine, Valerio Pachetti, to its culinary team. He comes to the island direct from The Westin Pune Koreagon Park in India where he was responsible for the implementation of authentic Italian cuisine at the award-wining Prego restaurant.
Born in Colombia, South America to Italian parents, Chef Valerio enjoyed a multi-cultural childhood where good food was the focal point of his daily life. Upon graduating from a private culinary school in Rome, he went on to enhance his skills at a number of pizzerias and seafood restaurants in Rome. For the next few years Chef Valerio travelled extensively and accepted a succession of culinary roles in exotic destinations such as Brazil, Myanmar, Vietnam, India and the Caribbean. After exploring the world, learning about different cuisine styles and cultures, he decided to perfect his technique by returning to his Italian roots in a Michelin-starred restaurant in Sicily.
Apart from food, Chef Valerio is also passionate about language. He speaks fluent Spanish, English, French and Portuguese as well as basic Vietnamese and Mandarin. Now he is taking the time to study Bahasa Indonesia.
Chef Valerio has come to the island of Bali to oversee the set-up of Prego, a Westin concept restaurant that puts the fun back into Italian dining. This family-friendly venue will be part of a brand new wing that is currently under construction at the resort and will be operational in August 2013. With its open-plan kitchen, vibrant decor and uplifting ambience, Prego will be the ultimate place to experience authentic Italian cuisine. The young chef is currently familiarizing himself with local produce in an effort to source the freshest and top quality ingredients. Generous portions of classic pasta dishes along with regional specialties and wood-oven pizzas will represent real value for money.
Chef Valerio will be the face of Prego when it opens and he is eager to introduce an array of entertaining gimmicks to bring the restaurant to life. He will also take the time to talk to each guest as they dine in this interactive setting and host pizza workshops for children. There will be lots going on at Prego including a Sunday Brunch that promises to put an exciting twist on weekend dining for in-house guests as well as members of the local community. It will be a great day out for the entire family with live cooking stations, music, clowns, activities and a farmers market.
Chef Valerio feels that it is important to maintain the integrity of Italian cuisine by honouring traditional recipes and using quality ingredients. He is of the opinion that there is simply no need to mess with dishes that have been perfected in Italian homes for many generations. Therefore, Prego will present a balanced menu of delicious fare that is healthy and full of flavour.
